How and when do I change a u-boat in sh5?????

You can't do it manually or with, "Renown." You have to take what they give you. Really, with the sparse selection, it's immaterial. Early on, you'll be offered a VIIC which is probably as good as it gets...

There's nothing to see....until the modders or Ubi with DLC release a IX boat, you will have to settle for what you are given:damn:
