Hello. Before I started my Amercan campaign I set my realism to 73 which includes manaul targeting. I have noticed once I am on my 1st mission that I have auto targeting. Once I save the game and look at my settings they are back at 42 realism???. I did notice that when you start a career that you have to select the degree of difficulty when you name your captain. Does this have something to do with that??

Yes. this overwrites your previous made settings, so you have to do them again bevor leaving port.

Will it let me change them will I am sitting at the dock? Tried to change them during the mission and the only 2 options I had were sound options and graphic options but no gameplay options?

No, you can only do it from the desk office.
Set them before going out for patrol and they should not
change until you go modify them.

 If, by that, you mean while you're in port ... you can change your campaign options via the radio on the shelf in the "office" (as Thor mentioned).

I had a fit trying to figure out why my settings kept changing until I found that radio. (Admittedly, unlimited fuel would have been very nice in my immediately following patrol.)
