I haven't played in about 3 years, so now I'm a noob again!
I just loaded up SH3 with GWX 3.0 (which is awesome!) and I have a question: I started in 1939, how can I tell which nations I am at war with, and which are neutral?

Be very careful. If it's August 1939, you're at war with nobody yet and won't be until the start of next month. August is just to get into position and gain experience. ;) The F1 command should have a spreadsheet among it's menus that shows when a state of war exists.

That explains why people keep yelling at me.
I sunk a couple of German merchants, I need to tone down my "Allied Assault" impulse...
Right now I use the free camera to identify a ships flag, which works pretty good but feels like cheating. What's the best way to do this? Do you guys sneak up on a ship, get in position, up the periscope, and then are like "Damn, its one of mine... Lets sink it anyway!"

Hey, there are guys who play without time compression and deodorant for whole patrols, just for that real deal feel. Crank the AC up to eleven, man!
Did you try those "Recommended target" orders watch and weapon officers have? I think I used those and they seemed to have really good eyesight.

In the extreme upper left hand corner of your periscope or UZO screen there are pulldowns with flag recognition charts.
And if you sink neutral ships, their renown value is deducted from your score. If you sink friendly ships, 10x their renown value is deducted from your score.

You are given 1500 renown instead of the usual 500 to account for the debit you will incur for sinking neutrals/friendlies.

I just recently started two new careers, both of them just cruising around looking at the sights. I used one of them to recreate the historic fact that they sent 14 u-boats out to the Atlantic on August 19, to wait and be ready. In spite of that I didn't see an good target until September 7.

And fill its sump with salt water! And yell "Alaaarm!" every time the phone rings. And cover yourself with diesel oil, or at least keep a pan of it the room for that special ambience.

And call 50 or so friends, and have them bum around your home without taking a shower or changing clothes. Also, get drunk to simulate the effects of the waves.
And no women!
