I recently had builded a set with Asus P5KC, Q6600 G0, MSI NX8800GT OC, and 2GB (2x1GB) G-Skill DDR2/800 Latencies 4.4.4.12.
SH III and IV works fine, about 200 FPS into control room, Game settings at full, drivers settings at performance, FSX too even with game graphics settings at full... and drivers settings at quality.
I only have troubles with X-Plane, with all at full, i have 30/40 FPS, i was enforced to reduce settings at a midium level to have 80/90 FPS.
All above in 1280x1024 32bit textures.
E6850 is cheap, same price than Q6600 G0, and will give you more performance, but not too much and with old games, with new generation may be the Q6600 G0 is a best choice, a good buy, thinking in future, and is not expensive as QX series... plus Q6600 is a 2.4 GHz 4 cores, and in the web you can found reviews where it is overclocked up to 3.85GHz with no temperature problems.
I am using it with a Scythe Ninja Plus Rev B, it maintain the cores at about 6/10 degrees under the motherboard temperature, and playing games i didnt seen it beyond 39/40 celcius degrees ( NO overclock) with the cooler fan at very low speeds.
Then even when with stock frecuencies a E6850 may be best in performance, a Q6600 may be better thinking in future, and due its overclocking capabilities. If you choice this, be ware to buy a G0 version, use CPU-Z to verify.
Just read and read many reviews... before buy.
Hope it may be useful...:up::up:
I forget...
It is important to not use the motherboard, "onboard" sound card, it "eats" you procesor resources, and droops a lot your FPS, just use a good sound card with hardware acceleration by the own card.
An X-Fi is a good choice, it do not uses your processor.
Plus there is another model of X-Fi, more expensive wich have its own RAM memory asigned to the sound proccess, if do not remember bad a set of 64 Mb onboard RAM memory into the card, but it was about the double price of the standard X-Fi.
I have the standar one and works fine.

Q6600 (easy overclock), if your not running sli get a P35 chipset mobo, 4GB of DDR2 ram, thermalright ultra 120 extreme and 120mm fan.
