Yes, we all use manual. But in your position you're using you're spending all your effort targeting and not enough running the boat. I suggest going back to the auto targeting and concentrating on boat handling until you're confident in that.
First, what version are you running? Have you installed patch 1.3? If not, I suggest you do so now. That will mean starting a new career unless you are in port. Then, what mods are you using? I would suggest running the game naked until you gain some skill. Trigger Maru 1.5 is the greatest for experienced skippers, but I fear it can be a source of frustration for newbies. The saving grace for Trigger Maru is that you will encounter more unescorted merchants. Right now you need some confidence building with destroyers though, and that is best done with the base game.
Now we need to know more about your death dive. Were you depth charged or shot at on the surface before you dove? If not, there is no reason you should enter a death dive. Review the navigation controls, especially ordering depth, crash dives, normal dives, ordering periscope depth. Practice with no bad guys around. I've been to 320' with no problems at all and that is not near the limits for a Gato, much less a Balao.
Mostly, in order to help we need more information than you are giving. A hull with holes in it is going down never to return. An intact submarine is another matter and we don't know which you had.

There is the possibility Rattie is using Metric? That might explain the the 160 max dive statement :P

Most of the players here do play reaistic, but I'm one of the exception. I don't use TDC as I don't like the trigo behind it. I play v1.2 + Die Slowly stage 16. I'm always thinking that they DDs in v1.3 are overdosed and unrealistic. So if you want to play easily, install v1.2 patch, after gathering experience after 1~2 career, consider updating to v1.3
Ok. Back to the topic.
First, you've to ensure that you're not touching the sea bottom. Send a ping to check depth below keel if you're NOT chased by any DD.
Secondly, some early war subs like the Sugar boat (S-class) CANNOT withstand pressure when going to deep (>120m / 400ft). Others like Gato don't have this problem.
Finally, to pull the boat up, use Blow Ballast command. Blow it for several times to ensure that the boat will rise. WARNING: If chased by DD, prepare for a gunnary duel. If a cruiser is near you, YOU WILL PROBABLY DIE. You may consider AHEAD FLANK after reaching surface ,man the desk guns to wand them off, and change direction / speed often, head to nearest U.S. naval base, hoping that the tin cans will break off attack / get destroyed BEFORE you do. Use torpedoes as "sniping weapon" like what you see in U-571. (U-571 definitely sucks as it is very inaccurate. But I'm just quoting a possible tactice that you may employ)

That would be my guess as well 200 meters :o
How are you getting to that depth ? There are better ways to dive than just pressing the 'D' key ;)
