I was looking for save files in the game for two reasons, to make easier erasing all the autosaves, and secondly, with the hope that they were perhaps editable with text.
Does anyone know first off where the career saves are located, and if they are modable for stats, sub name, type, etc..?

Look in "my documents" for a silenthunter 4 folder. Save games should be there.
They are not named as you may have saved them in game. You'll have to look at the file attributes by turning on detail view, then go by the date & time.
As to being able to edit, there may be some files you can edit, but I haven't messed with them.

I have messed with the files containing the contact reports to reduce their number while playing under 1.1. Removing these did no harm to the game. I haven't had to do that with 1.2 yet.

Between myself and my brother we've sussed out how to edit the save-games, following a nasty incident in which a "new command" led to a Porpoise. The files below are the key ones, editable in notepad. I've also listed the elements of each that are the bits you'll be interested in.
Activeuserplayerunits.upc controls the hitpoints and efficiency of each part of your submarine. Also each individual crew-members experience, skills, specialisation, local skills, hit points etc. It also includes which Submarine you're currently captaining.
CareerTrack.upc controls your current amount of renown (useful for those of us who aren't skilled enough to play at 100% but would like to afford decent torpedoes :)), tonnage sunk, medals, available medals for crew, available promotions for crew, and all the information held in your Captains Log.
Playersettings.cfg.rep controls your current date, some further submarine captaining elements , and what radar, guns, AA etc you have installed.
I've not personally edited which sub I'm in, so am unsure if it's Playersettings.cfg.rep or Activeuserplayerunits that determines your sub class.
Hope this is of some help.
Edit to add : I'd very much recommend saving in port and editing that one, rather than a "live mission" save. And naturally backup.

VonBlade nailed it. There are some things you cant edit - such as putting a yamato right in front of you at a dead stop.... Really depends on what you want to change. Might want to check over in the MOD forum for some of the info on things like this though.
