I've seen a few people say they calaculate a targets speed from their bow wave?
Can anyone take some screenshots and post some examples of how to do this?

It's not calculation - you just estimate it based on experience.
Just look at a few ships, compare with the Rec. Manual (starting at 50% of max. speed seems a convenient, if a little too convenient number to start at...) and determine from there.

I suspect one could be made, but frankly, the use of it would have to be considered a cheat. If you're going to do that, just use the chronometer auto speed cheat (when it is fixed that is!)
In reality, each vessel will have a different bow wave for a different speed depending on the water line profile. SH4 on the other hand will (almost certainly) have a speed=bow wave that is the same for all vessels :(
In fact, you can probably just look at the bow wave of your own sub at different speeds to get the idea. From what I saw, the bow wave changes length with speed rather than height...
