According to the SH3 printed manual there is actually very little difference between them, except that the VIIC dives a little faster, but max speed submerged is a little higher on the VIIB.

Why should I upgrade to the VIIC?

I'd asked the same thing quite some time ago. And while I didn't get a 100%-positive answer, the replies I did get said that the VIIC would, most likely, be able to accomodate more of the advanced upgrades as time progressed than the VIIB would.

Not sure if that's fact or not, but that's what I remember being said.

If you have renown that you don't have a use for?

I see, I'll upgrade when I'm into -41 then, probably got loads of renown anyway. The VIIC/41 looks even better, with increased pressure hull thickness it can take more damage and dive deeper.
