I just got the IXC, but know that you can get the IXD2 later on down the line. Is it worth it? I think it can carry a few more torpedoes, and has the longest range of any U-boat, but is there anything else significant about it? Or is the IXC good enough to keep the rest of my career?

It all depends on a person's personal tastes. If you like the IX-D2 better than the IXC, then go for it.
Both are large, cumbersome units any way you look at it. I prefer the VIIC. It's more maneuverable, dives in 27 seconds, compared to 37 seconds for the IXC and 42 seconds for the IX-D2. The VIIC holds fewer eels, but its smaller size (67 meters in length, vs 77 meters and 87 meters for the IX series), makes it more like driving a full-size car, instead of a tractor-trailer big-rig.
The IXC has a range of 11,000 nautical miles, and the IX-D2 a range of 23,700 nautical miles. Consequently, since you're capable of traveling further, you'll find that most, if not all, of your patrols will send you halfway across the planet. You'll spend half your career, and half of each patrol just getting to and coming home from your patrol quadrants.
