Confusion yet again

So far I have been playing Quick Missions and Single Patrols and using a "Custom" Options Choice with some of the difficulties selected and some not.
Today I started to play my first Career game but within this ,the Difficulty Level Choices do not seem to allow a "Custom" selection--only Low,Medium and High etc.
Is this actually the case ?
Being able to precisely tailor the range of difficulty options to ones own needs was for me one of the major advantages of this sim---but if this is not possible in the central Career mode that rather ruins the sim for me.
Could anyone please confirm whether I have understood this rightly or wrongly and if wrongly---how and where can one Customize ones Career Difficulty Level.

In the office before you start your career you change your option in there for your game. I believe it is in the bookshelf to the left.
