Exactly how?

Im talking about u boots here,so i have one question.
Target is spoted through the periscop or by deck watch-so now what?
We all have diferent tactics and procedures,but what was the historical one,how do u track the target,measure course,determen speed,calculate zig zag parameters if there were any,aob mesearment(we have our own,but how close was it to the real thing).I was searching like crazy on net and was hopeing to get some knowlage about exact attack procedure(not all at once but was hopeing to be able to put peaces together,but no joy)
So i was wondering does any of u have some inside track about this,and wuld like to share
