One thing I have noticed about the Aviator is that there aren't many programmable buttons (only 5), while the 3D Force Pro has 12. Could I get away with having that few of buttons without using the keyboard much? Because of this fact, I'm leaning on the Logitech now because I don't think I would really use the dual throttles and I would like force feedback.

Whether 5 buttons will do you depends to some degree on what you want to fly I guess, five buttons is more than adequate for a fighter in IL2, however if you want bomber stuff on your stick, you'd be running out of options. But if you want Force Feedback, then you've answered your own question, as the Aviator isn't FF.

What comes to getting either CFS3 or IL2, I'd say get the IL2. Over 300 modeled planes with close to 200 as flyable. Also, the engine, graphics and the overall feel is much better in IL2 than in CFS, IMO.

That does seem a bit pricy, but I recently learned that I can buy off the Saitek website. So I'm just going to get the Cyborg Evo.
