Recommended Missions / Patrols / Starts for a beginner?

Howdy,

Dangerous Waters player here, recently picked up SH3/4 on the Steam sale and I'm learning the ropes.

I've found a few helpful community missions for practicing manual TDC and I'm getting ready to gear up for the real game.

I'd like to roam the ocean in a largely destroyer-free environment, using hapless merchants as "live" TDC practice until I'm ready for the real thing.

Are there any particular career starts that act as a sort of shooting gallery? Or will any old start do, provided I'm patient enough?

If you look at the map, east coast of the Philippines between Mindanao and Luzon Straits has a lot of unescorted merchant traffic.
