My twistcontrol rudder on the joystick is a bit messed up, it only takes a feather to touch the stick and the rudder points ½ to the left. It's kinda hard on dogfights, when you bank and forget to adjust the rudder slightly to the right.

Can't you calibrate your joystick so that it isn't as sensitive? Also, how should rudder be used? Rudder left when banking right, and rudder right when banking left? Or is it: rudder left when banking left, rudder right when banking right?

There's settings in IL2 to make the joystick less sensitive, but I've gotten used to have it on default. I dont use much rudder when turning, mainly just to keep my plane level.
