I would go with the Fighterstick and the Rudder Pedals from CH.
The throttle controls are easily mapped to the keyboard, and you never really mess with them in a critical situation.
But I'm a boom and zoomer, I like Corsairs and Fw-190's, so in combat my engine is always balls to the wall.
