TorpedoNumbers is what I think you are looking for.
As it is in your posting, your sub will carry 20 x ADCAPs, 4 x Moss, 8 x Harpoons, 8 x TASM, and 8 x TLAMS. The SSN-21 class can carry 48 of combined total.
For me, and just as an example, I changed mine to 40, 2, 0, 6, 0. If I need TLAMs, it lets me go home to get them. The TASMs are just for support ships that have gotten to far away while I was dealing with the escorts.
The game isn't all that variable in its missions and torpedoes are pretty much a kill shot. I use those mostly.
