I only have 3 options on the diving bar without deck awash and crash dive.

That is correct.

The shafts have 2 buttons which are lit.
There is another button to the right, what happens when you press it?

I won't get the game to show me the essentials like speed and fuel in the little box like in sober's videos on the first page

I will have to come back to you on that one as the picture above does not show it but it may just be hidden and appears when the mouse is used.
sober's mega mod is very much a hands on approach for the player.
You will have a much bigger role to play for much of the game play revolves in your interaction with the crew and also you have to be hands on with the controls.
This is a very immersive game very different to TWoS where you can rely on the crew to do much of the work for you.
