I am a newbie and not sophisticated so give me simple advice please. I have been using manual torpedo firing. Sometimes I miss because my angle is off, so I will work on it. I also tried to use the TBT (I think that is what it is called) to program in ship speed, distance, etc., but I could not input some of the information. What steps do I need to take here? This game is quite difficult for me, and I am playing at 0% realism.

I suggest to use auto targeting for now, and familiarise yourself with the game. For a newbie to sub sims there's just too much to get one's head around imho.
Once you're comfortable and gotten used to the sim and how it works you can try manual targeting.
Myself, I prefer auto targeting. US boats had a number of people that together determined the firing solution - it wasn't up to the skipper alone.

Look in the "Sticky Threads". There are some great tutorials on manual targeting.
