Does anyone know if the historical MK 14 problems with depthkeeping are modeled? I tried some tests last night and got mixed results. Do I automatically subtract 10 feet from the setting as actually happened?

It's hard to say..I was testing it on the convoy school mission and, for testing purposes, I'd set 1 and 3 to contact at 12ft, and 2 and 4 to inf at 30ft and fire at the Nippon Maru. 1 and 2 would hit fairly regularly, while 2 and 4 would miss more often..I'm not decided for sure yet..

I guess the easiest way to test would be to run the torpedo school about 10 or 20 times, and see what you get.

There is a possibility the sub school does not reflect what you get in an early patrol. Seems I remember they are all around 1943+. Torpedo performance was improving.
Also, I suspect the purpose of the school is to demonstrate the interface and tactics and that's why you have later war periods and subs.

It may not be a good test bed for early war historical accuracy.
